Scientists' beef research earns international prize

Two UNL scientists were part of a research team awarded the 2004 International Meat Secretariat Prize for Meat Science and Technology for its beef muscle profiling research.

Chris Calkins and Steven Jones, meat scientists and animal science professors, received the prize in June. It recognizes the international significance of their beef muscle profiling research with University of Florida meat scientists.

For this research, Calkins, Jones and Florida meat scientists analyzed more than 5,500 muscles of the beef chuck and round. They found that several muscles traditionally used for ground beef or roasts had the potential to be used for higher-value products. The flat iron steak, the best known of the resulting products, is now used internationally, and others are gaining popularity. These cuts provide new products for cost-conscious consumers. As a result, the wholesale value of the beef chuck increased by more than 5 percent at a time when the value of the rib, loin and round primal cuts didn't change, Calkins said.

As part of this project, a muscle profiling manual, a CD-ROM and a Web site about beef muscles were developed. Industry and international scientists use this information to identify muscles for new product development and study.
